On the occasion of the opening on June 11, of the new Chenot Palace Weggis in Switzerland, Dominique Chenot shares his recipe for well-being tabbouleh to feast healthy.

TABOULÉ WELL-BEING AT BOULGOUR

Recipe for 4 people

Ingredients

  • 100 g bulgur
  • 150 ml vegetable broth
  • 2 tomatoes

  • 100 g cucumbers
  • 50 g new onions
  • 2 bunches of parsley
  • 2 mint boots
  • 20 g toasted pine nuts
  • 10 g red onions
  • 80 ml lemon juice
  • 80 g extra virgin olive oil
  • 100 g lettuce
  • 1 pinch of ground pepper
  • 1 pinch of unrefined salt

Bring the vegetable broth to a boil.
Remove from fire.
Add the bulgur to the hot broth and cover. Leave to soak until the broth is completely absorbed.

Meanwhile, wash, peel and coarsely chop the vegetables and herbs.
Add the toasted pine nuts and season with lemon juice, olive oil, salt and pepper.
Let sit for about 15 minutes.

Serve the bulgur and mixed vegetables, or separately as desired.
Garnish and decorate with the lettuce leaves.
